These potato swirls take a little bit of time and patience but the result is a creamy and elegant potato which is crispy on the outside, fluffy on the inside, and perfect on its own or as a side.

Cut your peeled potatoes into chunks and boil them until fully cooked, about 30 mins. Strain and let it rest for 5 mins.

Preheat the oven to 220°C.

In a bowl, mash the potatoes well until fully smooth.

Make a small well and mix the egg yolk, cream, butter, cheese, white pepper and salt until fully incorporated.

Add the potatoes in a piping bag with any big open star tip.

On a parchment lined baking tray, create the swirl pattern of the duchess potatoes.

Gently brush each duchess potato with melted butter and bake for 40-45 mins. Keep an eye out for it not to burn.

Serve as a main or as a side. I served mine with Dutch slavink and roasted carrots. Enjoy!
