Cuban Meliton 🥮

This is my mom's favorite dessert, and I wanted to give her that special treat.

Mix the flour and butter until the mixture is crumbly.

Add the sugar and stir, then add the salt, egg, and vanilla extract, and continue mixing. Once the dough comes together, wrap it in plastic wrap and refrigerate for 1 hour.

After an hour, take portions of the dough and roll them into balls. Flatten each ball into a disc and place them in muffin tins (cupcake pan) lined with decorative paper or greased and floured. Refrigerate again.

For the filling, blend all the ingredients together in a blender or with a mixer.

Remove the muffin tin from the fridge and pour in the filling, leaving a little space at the top so it doesn't overflow.

Bake at 350°F (180°C) for 40–45 minutes.
