In a saucepan, mix rice flour, tapioca flour, water, and pandan extract; cook over medium heat, stirring constantly until thick and smooth.

Transfer the mixture into a piping bag or squeeze bottle, then press it through holes into a bowl of cold water to form short green jelly strands (cendol).

In another pan, heat palm sugar with water until fully dissolved into a syrup; let cool.

Warm the coconut milk gently with salt, then allow it to cool (do not boil).

To serve, place cendol in glasses, add crushed ice, pour in coconut milk, and drizzle generously with palm sugar syrup.

Tips
Do not boil the coconut milk, as it can curdle—heat it gently just until warm for a smooth, creamy texture.
