Ingredients

Serves 2 servings
  • 7 ozchicken (200 grams)
  • 2 packsinstant pho noodles
  • Celery, lime leaves, leek, bean sprouts
  • Chicken bones, pork bones
  • 1/2 pieceginger
  • 2shallots
  • 2green onions
  • 1/2onion

Steps

    Blanch the chicken and pork bones in boiling water, then remove them immediately. Rinse briefly with cold water.

    Place the bones in a pot of cold water and bring to a boil.

  3. 3

    While the broth is heating, lightly season the chicken with 1 tablespoon chicken bouillon. Add the chicken to the pot with the bones. Start cooking the chicken while the water is still cold.

    Slice the ginger (no need to peel) into 1/4-inch (about 1/2 cm) thick pieces. Char the ginger and shallots over a gas stove until fragrant.

    Once the broth comes to a boil, reduce the heat to low. Add the leek, celery, and the charred ginger and shallots to the pot. The aroma will be amazing!

    When the chicken is cooked, remove it and soak it in cold water to keep the meat from turning dark. I used pre-cut chicken pieces.

    Continue simmering the broth for 2-3 hours. You can make the broth the night before for breakfast the next day, or cook it in the morning for lunch. When the broth is ready, add the seasoning packet from the instant pho noodles. If you have rock sugar and coarse salt, you can skip the seasoning packet.

    In a bowl, add the dry pho noodles from the instant pack, thinly sliced onion, rinsed bean sprouts, shredded chicken, and the white part of the green onion. I use the dry noodles from the instant pack because they're soft and just need to be covered with boiling broth for 3 minutes to cook.

    Pour the boiling broth over the bowl. Cover and let the noodles cook. After 3 minutes, uncover and add chopped green onions and thinly sliced lime leaves. That's it!

    Prepare a small dish of salt, pepper, and lime juice, with some thinly sliced shallot or green onion. When eating pho, dip the chicken in the salt-pepper-lime mixture or enjoy it with the pickled shallot. My husband loves it!
