Pithala rice is a traditional Maharashtrian dish, which is served separately, but I have cooked it in such a way to make it a one pot dish.
Steps

Wash rice 2 to 3 times. Put for cooking in a heavy bottom pan on a high flame,add 3 cups water.

Now take besan in a bowl,add ajwain,salt and water to make a paste.

Cook the rice upto 80% and add besan paste over it.Cover the pan and cook in a low flame.

Meantime cut onion into slices and deep.fry till brown

Prepare a tadka for that add oil to.it,then add cumin seeds, mustard seeds and asafoetida now add curry leaves, garlic and green chillies and saute well.

Now arrange it in a serving bowl, put onion on it. Spread tadka and garnish with fresh coriander leaves and serve.
