Wash eggplant, Make small cuts on the baingan with a knife. Place garlic in eggplant.Keep it for roasting on direct flame on the stove-top Keep the flame slow roast tomatoes too

Roast the eggplant and tomatoes till completely cooked and tender.
Remove the eggplant and tomatoes from flame keep in a bowl till it cools. - 3
Peel and Chop the cooked eggplant If you see plenty of seeds in the cooked eggplant, then remove and discard them.

Mash tomatoes too,Chop onions,,

In a kadai or pan or skillet heat mustard oil. Add onions.Saute the onions till they soften and turn translucent, Don’t brown them. Add grated ginger

Now add the tomatoes cook until the oil separates red chili powder,salt,coriander powder, turmeric cook 2,3 minutes,Stir and mix well.

Combine, the mashed eggplant with the onion-tomato masala mixture. You may add 2tsp water for consistency, Cook 4,5 minutes mix well

Garnish with coriander leaves

You may add peas too
