Steps

Place the poha in a colander and gently wash under running water. Drain completely and let it rest for 10-15 minutes so it softens without getting mushy.

Keep ready boiled corn kernels, chopped onion, coriander and other ingredients. In a pan add oil, hing, mustard seeds, jeera, curry leaves, and green chilli. Let them splutter.

Now add chopped onion sauté until it turns translucent. Add boiled corn, mix well. Add salt, turmeric powder, red chilli powder, coriander, sugar, and salt. Mix well.

Add soft and fluffy poha. Mix gently otherwise poha will get mushy. Sprinkle few drops of water. Cover it, cook it for 5 minutes on a low flame of the gas.

Turn off gas stove. Squeeze lemon juice, sprinkle chopped coriander, and add grated fresh coconut. Gently mix everything well. Ready to serve.

Serve warm. Garnish with grated coconut, coriander, onion and thin besan sev. Enjoy a classic monsoon special dish with a cup of masala hot tea.
