Buttery Lunar New Year Almond cookies

Similar to gold coins, these buttery cookies are regarded as a lucky food. While they are frequently shared during the Lunar New Year, almond cookies are also a staple in Chinese bakeries and restaurants. These cookies are not overly sweet and are simple to prepare. The way they crumble and dissolve with each bite is truly delightful.
