Steps

Wash the brinjal properly and pat it dry.
Make vertical slits to check if it is fresh inside.
Apply a little oil all over the brinjal.
Roast directly on a low–medium flame, turning continuously until evenly charred and soft.
Remove the skin, mash the pulp, and keep aside. - 2

Heat peanut oil in a pan. Add asafoetida.
Add chopped green garlic and spring onion. Saute well.
Add chopped spinach and cook for 2 minutes.
Add ginger–green chilli paste and saute for 2–3 minutes. - 4

Add chopped tomatoes and cook until soft.
Add red chilli powder, turmeric, and salt. Mix well.
Once the oil separates slightly, add coriander–cumin powder.
Add the mashed brinjal and mix properly. Cook for 3 minutes.
Add lemon juice and fresh coriander. - 6

Turn off the flame. Add 1 tsp ghee and mix gently.
Garnish with extra green garlic and spring onion. - 8

Serve hot with roti, paratha, bhakri, khichdi, or plain rice.
Tips
∆ Roast brinjal directly on flame for authentic smoky flavor.
∆ Fresh green garlic gives the real Surti winter taste.
∆ Adding ghee at the end enhances richness and aroma.
∆ Best enjoyed with bajra rotla or soft phulkas.
