These yummy and irresistible Vadas made with Split Green Gram or Hari Moong Chilka exactly like those of South Indian style Parippu Vadas or Bengal Gram Vadas were a super delicious treat at Iftaar meals by me.
These little beauties were absolutely flavourful and aromatic and were an instant hit.
The rest of the ingredients are the same as in the original recipe. Not only did these turn out yum, they looked equally gorgeous.
Crisp and crunchy, absolutely beautiful in colour, these Vadas have turned out perfect in every way.

Soak split green gram overnight, then drain well. Reserve two tablespoons of it to use later.

Coarsely grind green gram without water. If needed add a tablespoon of it.

Mix in onion, green chillies, salt, ginger, garlic, curry leaves, coriander leaves, turmeric, crushed coriander seeds and red chilli powder. Red chilli powder is optional. Also add the reserved gram to the mix.

Shape them into small vadas and flatten a little with your hands. Deep fry them in hot oil on a low to medium flame. (Care should be taken for the first 2 minutes and the vadas should be left undisturbed.)

Drain on paper towels and serve sizzling hot alongside any Indian Chutney of your choice. Enjoy
Tips
For extra crispiness, ensure the oil is hot enough before frying the Vadas.
