In a mixing bowl, combine all the dry ingredients.

Gradually whisk in the milk, then add the vanilla extract and apple cider vinegar. Let the batter rest for 10 minutes.

Pour the batter into a pancake or crepe pan. Cook for about 1 minute, until the surface starts to dry and small bubbles appear, then flip and cook for another 30 seconds.

Serve with maple syrup, honey, or berries.
