My late aunt loved rice pudding! When I took her food shopping the first thing she wanted to make sure to get was her rice pudding lol. While I make mine I will have her on my mind….

Wash the rice and add to a pot with water and salt.

Add the powder milk and sugar. Stir.

Add vanilla. Turn heat to a medium and bring the rice to a medium boil and cover I also add my dates to soften then remove. Once covered turn to a low heat and stir after 6-7 minutes and add cinnamon stick and nutmeg. After another 7 mins stir again. Check the rice to see if almost done. The rice should be tender with a little bit of liquid around just not totally dry rice. Turn off heat. Chop dates after removing seeds.

Add to the rice. Take the egg and scramble into a bowl. Remove some of the rice from the pot and put in a separate bowl and add the scramble egg and mix thoroughly. Add the rice back to the pot and mix well. Now is the time to add more milk or heavy cream if you like yours to be creamier. The rice will absorb more liquid.

Put into cups of choice and garnish with dates, raisins, nuts or what your tastebuds crave. Refrigerate for about 1 hour. I do enjoy mine warm. Enjoy this delectable dish 🤩
Tips
Feel free to add 1/4 - 1/2 c of heavy cream after adding the egg for a creamier consistency.
