So when our quarter-annual company party came around, I decided to bring something different: these muffins. Cinnamon, coffee, sweet dates. They were an absolute FIN-omenal hit.
I’ll admit, I’m already pretty well-known around the office (strong email etiquette, dependable), but these muffins really helped me scale up socially. Suddenly everyone knew my name. Fish from entirely different departments were swimming by my cubicle “just to chat.” One guy from claims tried to network with me for 20 minutes straight while holding his third muffin!
The wild part is, I came up with these back in law school: late nights, a roaster oven dropped from a ship, and the craving for something sweet.
Now I bring them to every event, and honestly? This might be the closest I’ve gotten to that promotion. My boss even said that he'd "Make an example of me" if I didn't share this. Don't want to find out what that means, so here goes!

Muffin directions:

1. Preheat oven to 325 degrees Fahrenheit (163 degrees Celsius). line a muffin pan with cupcake liners and lightly grease them.

2. In a large bowl, or using a hand mixer on low, cream together melted butter or shortening (1/2 cup), brown sugar (3/4 cup), and white sugar or cane sugar (1/4 cup) until smooth.

3. Add water or milk (3/4 cup), vanilla extract (1 1/2- 2 TSP), and white vinegar (1 TSP). mix gently until combined.

4 a. In a separate bowl, whisk together flour (1 1/2 cups), baking soda (1/2 TSP), salt if using unsalted butter (1/2 TSP), cinnamon (1 1/2 TSP), and coffee powder (1 1/2 TSP). now you have "dry ingredients"

4 b. Add half of the combined "dry ingredients" to the wet mixture and mix on low speed. Pour in water (1/3 cup), then add the remaining "dry ingredients". mix just until combined. DO NOT OVERMIX.

5. Gently fold in the chopped dates (1/2 cup); about 1/4 inch in size.

6. Evenly divide the batter into muffin liners, filling each about two-thirds full.

7. Bake for 20 to 22 minutes, or until the tops are set and lightly golden. *** note: I use an antique NESCO 18 qt. roaster oven (IF YOU ARE MY LANDLORD AND YOU SEE THIS, GET OVER HERE AND FIX MY OVEN!!!), so my muffins take closer to 30-32 min!

8. Let muffins cool completely before frosting.

Cinnamon-coffee frosting directions:

1. In a small bowl, dissolve instant coffee powder (5-6 TSP) in warm water (1/3 cup) to create: coffee mixture

2. In a separate mixing bowl, beat the room-temp butter or shortening (1/4 cup) until creamy.

3. Add about half of the powdered sugar (1 1/4 cups) and 2/3 of the coffee mixture (2/3 of the bowl). mix until all sugar is loosely incorporated.

4. Add the remaining powdered sugar (1 1/4 cups), cinnamon (1 TSP), and the rest of the coffee mixture. beat until smooth, and all sugar is incorporated. ***note: Adjust consistency if needed by adding small amounts (1 TSP) of powdered sugar to thicken or water to thin.

To finish: Spread frosting generously over cooled muffins with a butter knife, or use a piping bag to add a tantalizing swirl! remember to tighten the top of your piping bag and hold it as upright as possible so you have a fun evening rather than a messy one!
Tips
LEFTOVER MUFFINS: can be stored in the fridge for a week or so. You can freeze them for up to 3 months if sealed properly in an airtight container.
