Sprinkle salt on the fish and place on a heatproof plate.

Top with half the ginger and scallions.

Steam over high heat for 10-12 minutes until cooked.

Remove, discard excess liquid, and top with remaining ginger and scallions.

Heat oil until smoking, pour over fish.

Drizzle soy sauce and water over the fish. Serve hot.
Tips
For extra flavor, you can add a splash of rice wine or sesame oil before serving.
