Chicken Friand with Best Ever Cream of Mushroom Soup

Preheat oven to 375°F. Season chicken with salt and pepper.

In a large saucepan, heat olive oil over medium heat. Stir in 2 tablespoons of butter. Add chopped chicken thighs, herbs de Provence, garlic, some chopped mushrooms. Add 1/4 cup of white wine. Cook chicken until done, about 7-9 minutes. Remove chicken from pan and allow to cool. Pour out any chicken juices for later use.

Add 2 tablespoons of butter to the pan. Sauté mushrooms until they give off their liquid and it evaporates, stirring frequently. Toss in 1/2 teaspoon of herbs de Provence, some white wine and sauté until fragrant, about 2 minutes. Transfer mushrooms to a small bowl.

Take the thawed puff pastry and lay it out on a baking sheet lined with parchment paper sprinkled with flour. Cut pastry diagonally into triangles. Spoon about 1/4 cup of chicken and 1/4 cup of mushroom mixture onto each half of the pastry. Fold and pinch to make large triangle friands. Brush tops with egg wash.

Bake friands in a preheated 375°F oven for 30 minutes or until golden on top. Carefully remove friands from parchment. One half of one triangle is one serving. Top with homemade cream of mushroom soup (see other recipe) and sautéed mushrooms and parsley.
