Boil water, add soaked rice, bay leaf, cloves, cinnamon, and salt. Cook till 80% done. Drain.

Mix yogurt, hot oil, ginger-garlic paste, spices, salt, and lemon juice. Add paneer, onion, capsicum, tomato, kasoori methi. Marinate 30 mins.

Blend tomato and onion into a paste. Heat oil and ghee, add cumin seeds, then garlic. Sauté. Add paste, cook 2–3 mins.

In an oven dish, layer sauce, rice, and butter. Repeat. Top with cheese, tomatoes, and green chilies.

Bake at 180°C for 20 mins until hot and slightly golden.

Tips
Grill paneer before layering for smoky flavor. Add cream to sauce for richness. Perfect for party or weekend meal.
