Wash, peel and cut all the vegetables mentioned above like bottle gourd, potato, capsicum, cabbage, beetroot, cabbage etc.

Put all these vegetables in a large cooker, add 1 glass of water, cover, and let it whistle 3 times. Once cool, grind them in a mixer.The beetroot gives it a lovely color. Heat oil in a pan and sauté the cumin seeds, chopped onions, and tomatoes.

When tomatoes and onions are fried, add salt and pav bhaji masala powder to it and mix well.

Cut the pav in half, apply butter, and lightly toast it on a non-stick pan. Transfer the pav bhaji to a bowl and place the chopped onion and lemon on one side. Place the pav on top as well. Grate the cheese on top of the bhaji.
Tips
I made this for my son's friends. I added green chilies and ground them while boiling the vegetables. Since it was a large quantity, I made it in a large pan. I prepared the tempering in a wok and then put it in the pan. While serving, heat it in a pan and serve it.
