Crush 3 potatoes by hand, cut the rest into pieces.

Heat mustard oil in a pan. Crush dried red chillies and add to oil then add Fenugreek leaves+ cumin & carrom seeds.Let them splutter

Add both types of potatoes. Mix well.

Add red chilli powder, turmeric, dry fenugreek, and salt. Mix and cook for 1 min.

Add curd on high flame, stirring constantly.

Cook for a short while, then turn off the heat.

Transfer to a serving plate and sprinkle garam masala on top.
Tips
Using mustard oil adds a unique flavor, and sprinkling garam masala at the end enhances the taste.Serve with parantha or poori & enjoy 😋
