Steps

Cook the duck leg in the air fryer until crispy and heated through. Reserve some duck fat for stir-frying.

Cook noodles according to package, rinse under cold water, set aside.

Slice mushrooms and shallots, chop bok choy.
- 4
Heat duck fat and stir fry oil together in a pan, add shallots, mushrooms, and bok choy, and fry until just tender.

Just before adding to the pan, rinse noodles again under cold water to loosen and unstick, then drain well.

Add drained noodles to the pan, stir-fry to combine with vegetables.

Add all seasonings: light soy sauce, dark soy sauce, chicken powder, ground ginger, garlic granules, crushed chili, and MSG.

Toss well until noodles are evenly coated and heated through.

Serve noodles on a plate, place the crispy duck leg on top, and sprinkle with sliced spring onion. Offer hoisin sauce on the side for dipping.
Tips
Rinse the noodles again before adding them to the pan to prevent sticking.
