One of my favorite summer salad recipes. This recipe is great for a crowd, or for a simple night at home.

Steps

Wash potatoes, prick on all sides with a fork. Place on a foil lined baking sheet and bake in a 350 degree f oven for 1 hr 15 min. Remove when tender all the way through. Allow to cool before handling.

Chop bacon. Add bacon and onion to a frying pan. Fry until bacon is cooked and onions are browned. Add garlic and cook for 2 minutes before done. Remove and drain bacon grease. Put in a large mixing bowl to cool.

When potatoes can be handled, chop and add to mixing bowl with the rest of the ingredients, except potato chips. You only want to mix this once at this point so that the potatoes do not decintegrate. Place bowl in refrigerator to cool for at least an hour.

When cooled, give salad a final mix. Taste and adjust seasoning with salt and pepper as needed. Serve in a bowl and crush potato chips on top for a little crunch. Enjoy.
Tips
For a little zing, add some horseradish.
If you need to cut down the time, cook potatoes partially or entirely in the microwave.
