Ingredients

4 servings
  1. 1small onion, minced
  2. 1carrot, minced
  3. 3 tbspolive oil
  4. 2 cansItalian style diced tomatoes
  5. 32 ozorganic tomato juice
  6. 1 tbspchicken boullion granules
  7. 1 tbspsugar
  8. 2 tbsppepper
  9. 3/4 cupsherry
  10. 3/4 cupheavy whipping cream
  11. 3 tbspfresh basil, chopped
  12. 2 tbspfresh parsley, chopped

  1. 1

    In a stock pot, add olive oil, onion and carrot. Cook until soft, about 10 min.

  2. 2

    Add cans of diced tomatoes undrained and tomato juice. Cook 10 min on high until boiling

  3. 3

    Add sugar, pepper, parsley, granules and 2 tbsp basil. Turn heat to low

  4. 4

    Once at a simmer, add sherry and cream. Cook about 30 min on low.

  5. 5

    To serve, top with the rest of basil.

  6. 6

    If you don't like it chunky, you can blend it all at the end.
