Ingredients

2-serving
  • 4Eggs
  • 3Tomatoes Large , blended into a puree
  • 1Onion Medium , chopped finely
  • , 10 ClovesGarlic chopped finely
  • of 5 StripsBacon , roughly chopped
  • To TasteSalt
  • To TasteChilli Flakes
  • 1 PinchSugar
  • 3/4 TablespoonParsley Dried
  • 3/4 CupWater
  • 3 TablespoonsWhite Oil
  • To TasteBlack Pepper Powder
  • 4 TablespoonsCheese Mozarella , grated or chopped

  1. 1

    Roughly chop the tomatoes. Then make a puree in the mixer. Keep aside.

  2. 2

    In a large non-stick wok, add oil. After it heats up, add onion and garlic. Sauté till the onions are translucent.

    Now add in the bacon. Saute for 2 mins.

  4. 4

    Add salt, chilli flakes, black pepper, and parsley. Mix well.

  5. 5

    Once the onion, garlic, and bacon are nicely fried, pour in the tomato puree.

  6. 6

    On medium heat, let the gravy simmer for 3-4 mins.

  7. 7

    Finally add in the water. Also put in the sugar.

  8. 8

    Simmer for 3-4 min, till the gravy thickens slightly.

  9. 9

    Very careful, crack an egg and put it directly into the gravy. Just like a sunny-side-up-egg-poach.

    Do the same with the other 3 eggs. Season the eggs with salt and pepper.

  11. 11

    On low flame, let the eggs cook for a min.

    Now sprinkle cheese on the yolks.

  13. 13

    Cover the wok, and let the gravy cook for 2 mins.

    The dish is ready. Serve over rice!
