Spaghetti Squash Lasagna Boats

I love veggie and fruit picking, and since its summer in NZ, we have been to few picking farms already and have had lots of fun picking up berries and cherries and some veggies too ... On one of those trips I picked up some squash and I decided to do something different with it. So I cleaned out the middle and removed the seeds and then stuffed it ... its a great alternative to using pasta. It makes it so much fun to look at and eat too :)
I decided to use turkey mince, a great alternative to the usual beef mince we buy for our pasta meals... I had a couple of hamburger buns at home leftover from previous night's dinner, so I quickly mashed a few cloves of garlic, mixed some mayo, spread it evenly and generously on the buns, sprinkled it with cheese and baked it ... mmm garlic bread!!!

Preheat the oven to 200C. When its hot and ready, place the washed squash on a baking tray. I cut it in half lengthwise and removed the seeds. Drizzle it with some extra virgin olive oil and allow it to cook. After 30mins has passed, check to see how far it has gone. Mine took around 45mins to be done

While the squash is cooking, its time to make the filling!

Saute the onions and mashed garlic in some oil. Once the onions have softened add the turkey mince, season with salt and pepper and cook for a few minutes till the turkey mince has almost cooked through

Add the diced capsicum and the whole jar of pasta sauce. Stir well and once the meat and capsicum are cooked through, remove from the heat

Once the squash is ready, spoon the turkey mince sauce evenly between each squash, and top it with a generous amount of grated cheese

Reduce the oven temp to 180C. Put the filled squash back in the oven. Let it cook for a couple of minutes or until the cheese is browned and bubbling

Serve Immediately
