Sautéed Silverbeet with Chickpeas

Silverbeet is very cheap at the moment here in New Zealand. I love how packed it is with NUTRIENTS!!!! Silverbeet will add fibre, vitamin C, vitamin E, vitamin A, folate and other nutrients to your diet, but an even better reason to eat silver beet is for the lutein it contains. This is an important antioxidant which helps protect our eyesight from damage by UV light (www.healthyfood.co.nz). Funny story: the other day after coming home with all of our groceries, miss D our 15mos old decided to take a peak into the bag as usual
She found the silverbeet sticking out of a plastic bag and decided to touch a leaf ... She freaked out and was actually quite scared to hang out in the kitchen till I had moved it to a hidden location (aka the fridge). Anyways back to the recipe, the white cubes you see is Paneer (type of cheese served in Indian cuisine),you can alternatively use toasted bread instead, or tofu

Saute the onions in some olive oil until they are translucent. This should take about 4-5mins. Next add the mashed garlic, chilli flakes, cumin and stir-fry for about a minute

Add the chopped silverbeet, some salt and stir to combine all the ingredients in the pan

Cover with a lid and allow the leaves to wilt. This shouldn't take too long! Once it has wilted, add the can of chickpeas

When the silverbeet is cooking, you can fry the paneer/tofu/bread in some olive oil till it has crisped up. Once the chickpeas has warmed through in the pan, add the paneer or tofu or fried brown/flat bread. Sprinkle the paprika, add the lemon juice and mix well to combine
