Ingredients

10-serving
  • 1 cupsVegetables - cut into medium thick long slices
  • 1/4 cupKadala channa / - cooked  -
  • 3. handfullCashewnut (soaked in water for 10 mints) -
  • 1Tomato small -
  • 1Onion small - sliced
  • 1/4 cupcoconut Grated -
  • 1/2 tspnFennelseeds -
  • 1 tspnsRed chilli powder -
  • 1/2 tspnCoriander powder -
  • 1/4Turmeric powder - tpsn
  • 1/4 tspnGaram masala powder -
  • Salt
  • Coconut Oil
  • Curry leaves

Steps

  1. 1

    Heat oil in a pan.Add curry leaves.Then add sliced onion, vegetables,cooked channa/kadala and cashewnuts.Sprinkle little salt and saute well.Now simmer the flame,cover and cook.

    When the vegetables are half cooked,add the tomato,mix well,again cover and cook in low flame.

  3. 3

    Meanwhile,add the grated coconut,fennel seeds.red chilli powder,coriander powder,turmeric powder and garam masala to blender.

  4. 4

    Add little water and grind to a coarse paste.

  5. 5

    When the vegetables are cooked well,add the masala paste to it.Saute for few seconds.Now add 1/4 cup water to it.Now saute continuously till the water dries up.

  6. 6

    Finally,drizzle 1 tspn coconut oil on top.Mix well and remove from fire.this tastes really good with steamed basmati rice.
