Spicy Paneer Pizza
With whole-wheat dough and homemade sauce, this pizza is simple and healthy. Both cottage cheese and red chilli are sources of Vitamin A, important in weight loss. Try this at home when your friends are over!

In a small cup, dissolve sugar in luke-warm water (2Tbsp hot water + 4Tbsp normal water). Add the yeast and let it to rest for 10-15 mins.

Combine the wheat and all-purpose flour on a clean surface (make sure the room at about 26C). Add salt and mix well with the flour. Now make a well in the flour and pour the frothy yeast and olive oil in it.

Using your hands (yes Hands, it needs your love too) knead the dough until smooth and a bit elastic (about 10 min). Keep the surface floured.

Grease a bowl with olive oil and place the dough inside. Cover the bowl with a damp cloth and let it rest for 4-5 hours.

Take the dough out on to a surface and punch it down. Divide it into two and let rest while you make the suace. Pre-heat the oven to 400F or about 200C.

For the sauce, peel a plum tomato and get rid of the seeds. In a greased sauce pan, add the tomato pulp. Heat until the tomato is soft and then using a potato masher, mash it properly. Season with salt and pepper.

Roll out the dough on a greased pizza pan or on a baking sheet. Bake each pizza for 10 min. in the oven.

Meanwhile, cut the cottage cheese into small cubes and the de-seeded chilli into thin round slices.

Apply the sauce and the shredded mozzarella on top. Add the cottage cheese and the chilli slices on top and season with your favourite seasoning.

Bake for another 5-7 min. and your pizza is ready!
