Vanilla/Rum Cake with Whipped Chocolate Ganache

Preheat oven to 325.

Grease and flour your cake pan(s)

In a large bowl, cream together butter and sugar

Add in egg yolks and vanilla and rum, mixing until fully incorporated. Set aside

In a separate bowl combine flour, baking powder and salt

Gradually add dry ingredients into wet ingredients, alternating with the buttermilk

Mix until batter is fluffy

Beat egg whites until foamy and thick

Fold egg whites into batter and mix until incorporated

Pour batter into prepared pan(s)

Bake until golden on top or until toothpick comes out clean

Remove from oven and let cake cool

To make the ganache, Place the chocolate chips into a bowl

Bring heavy cream to a boil in a sauce pan and take off the heat as soon as it starts boiling

Pour on top of chocolate chips and mix until dissolved

Let it cool off, then put in the fridge and chill for 20 min

Once chilled use a mixer to whip it to desired consistency (it changes from more smooth to more fluffy)

Frost with the whipped ganache and decorate as desired

You can do single layer, double layer (all depends on the pan(s) you use)
