Ingredients

2-serving
  • 2 cupswhole wheat penne
  • 4 clovesgarlic , minced
  • 1 inchginger finely chopped ,
  • 2tomatoes medium , outer skin removed and coarsey chopped
  • 1capsicum Medium sized finely chopped
  • 5spring onion finely chopped
  • to tasteSalt pepper and ,
  • Seasonings as per your choice
  • 1 cupyogurt
  • 2 tbspsOlive oil

  1. 1

    Cook penne by boiling it in water with little salt and 1/2 tsp olive oil, till it becomes soft. Drain and set aside.

    Remove the skin of tomatoes by roasting them directly over the flame.

    In a large skillet with a lid, heat olive oil over medium-low heat. Add in ginger and garlic, cook for 2 minutes or until garlic begins to soften.

    Add in tomatoes, salt and pepper. Cook for 5 minutes, or until tomatoes form a gravy.

  5. 5

    Add in capsicum and cook for 1-2 minutes till they soften a bit.

  6. 6

    Add your favorite seasonings like basil, oregano and give a nice mix.

  7. 7

    On low heat add the penne, yogurt and spring onions. Stir until yogurt is mixed well and all pasta and veggies are coated. Heat until just warmed through.

    Serve topped with a dash of olive oil.

    You may also add mushrooms/shrimps/ red and yellow bell peppers etc., as per your choice.
