Steps

Cook penne by boiling it in water with little salt and 1/2 tsp olive oil, till it becomes soft. Drain and set aside.

Remove the skin of tomatoes by roasting them directly over the flame.

In a large skillet with a lid, heat olive oil over medium-low heat. Add in ginger and garlic, cook for 2 minutes or until garlic begins to soften.

Add in tomatoes, salt and pepper. Cook for 5 minutes, or until tomatoes form a gravy.

Add in capsicum and cook for 1-2 minutes till they soften a bit.

Add your favorite seasonings like basil, oregano and give a nice mix.

On low heat add the penne, yogurt and spring onions. Stir until yogurt is mixed well and all pasta and veggies are coated. Heat until just warmed through.

Serve topped with a dash of olive oil.

You may also add mushrooms/shrimps/ red and yellow bell peppers etc., as per your choice.
