This is one of the dishes I frequently cook for my family, and everyone enjoys it. When I bought Tomatoes and realised they were not ripe and sour, I would most likely cook this dish. You can add extra ingredients such as Tofu, Prawns, Black Fungus, etc. If you added extra ingredients, just add extra Soy Sauce.

Ingredients

10 minutes
2 to 3 Servings
  • 3Eggs
  • Salt & White Pepper
  • 1-2Tomatoes *cut into bite-size pieces
  • 1 cloveGarlic *finely chopped
  • Chilli Flakes as required *optional
  • 1 tablespoonOil *plus extra
  • 1 tablespoonSoy Sauce *alter the amount
  • 1 tablespoonSake (Rice Wine)
  • *Note: If Tomatoes are sour, 1 pinch Sugar can be added, OR use Mirin instead of Sake (Rice Wine) to add sweetness
  • Finely chopped Spring Onion *optional

Steps

10 minutes
  1. 1

    In a bowl, beat Eggs and lightly season with Salt and White Pepper.

  2. 2

    Heat Oil in a frying pan over medium-high heat. When the pan is hot, cook the Egg gently stirring until set but still soft. Transfer to a plate.

  3. 3

    Add extra Oil as required, cook Garlic and Tomatoes. You can add some Chilli Flakes if you like. When Tomatoes started softening and juice is coming out, add Soy Sauce and Sake (Rice Wine).

  4. 4

    Note: 1 pinch Sugar can be added if Tomatoes are sour, OR use Mirin instead of Sake (Rice Wine) to add sweetness.

  5. 5

    Stir until the sauce is slightly thickened, return the Egg, and gently combine. It is a good idea to add some finely chopped Spring Onion on top when you serve.
