Rainbow Sandwich

A very healthy and easy to make vegetable sandwich which is colorful and tasty too. With its colored attractive layers even the hard core non vegetarians will never say a no if you serve it to them. A really good one for kids who hesitate to have vegetables as you can attract them with the colorful healthy layers.
I made five layers for this rainbow sandwich using five different veggies but used same filling for all layers. As this is a rainbow sandwich I made red, orange, yellow , purple and green layers and choose veggies matching these colors like beetroot and tomato for red, carrot for orange, yellow capsicum for yellow, onions for purple and cucumber for green. I wanted to try different fillings for each layer but as I didn't get enough time to prepare five different fillings , I thought to stick to one filling and change only the veggies.Yes that's the easiest part, make same filling for all layers and just change the vegetables that's it , your rainbow sandwich is ready.
This is a wonderful snack for a kids party or special occasion. You can even make it as a chicken and veg sandwich by adding cooked and shredded chicken to the layers as kids will love it more when a non veg touch is given to any dish. Also this sandwich is really heavy as it containes five layers filled up with lots of veggies , so it will be good if you serve them in small portions .You can even prepare the veggie filling ahead and keep them in the refrigerator . Mix all the ingredients under filling and combine well to make the filling.Divide the filling into five and keep them in seperate bowls.

Trim the sides of the bread slices and keep it aside.

Purple layer- chop the onion finely and add it to one bowl and mix well with the filling.

Green layer- chop cucumber and green capsicum finely and mix it with the filling.

Yellow layer- mix the finely chopped yellow capsicum with 1/2 tsp of mixed herbs, 2 tbspn shredded mozzarella cheese and the filling.

Orange layer- cook and grind the carrot and mix them with the filling once the carrot is cool.

Red Layer- cook and grind beetroot. Chop Tomato finely. Add beetroot and tomato to the filling and mix well till combined.

8\. Brush each slice of bread with some butter and spread each preapred veggie filling on the bread slices and layer it up.

Once all layers are done, cut the sandwich in the shape you want and serve it with tomato ketchup.
