Pan-seared Chicken with sun-dried tomatoes and Olives

I love sun-dried tomatoes, feta and olives! I love including it in pasta dishes, pizza and chicken dishes. I made this a couple of weekends ago. I was at home with the little Miss and didn't have a whole lot of time to spend in the kitchen, so I thought of a few things I could use to cook the chicken ... especially that feta that really needed to be used... and this dish came together
Read through the recipe - its pretty easy ... and it looks gorgeous when you plate it. It's pretty delish too
Have a great week!

Steps

  1. 1

Remove the skin of the chicken and place in bowl, season with salt and pepper

  2. 2

Heat the oil in a pan.  Add the chicken and  let it cook on one side, flip and let it cook on the other side too. Give it 5-7mins on each side and repeat. You want it to brown on both sides and cook through. I had the heat on medium low

  3. 3

Add the onions, garlic, thyme and let it cook

  4. 4

When the chicken was almost cooked through, I added the sundried tomatoes. If the pan starts to get real dry, add the chicken stock to loosen things up :)

  5. 5

When the chicken is almost done, add the black olives

  6. 6

Remove from the heat, and garnish with crumbled feta and the chopped parsley

  7. 7

SERVE! This goes great with some mediterrean style couscous, a salad, a veggie stir fry, the options are endless

New Zealand
Welcome to my Blog The Eaterspot. My blogging journey began in March 2010. I had just relocated from the US, and living in Wellington, New Zealand was definitely a whole lot different from the US. The day after I landed here, I began a full time job, but I still had a whole lot of free time after 5pm. I was cooking a lot of new dishes from various cuisines so the blog was born to document my cooking for my friends and family to follow what we are upto as a newly married couple and to see what we were eating! Thanks for visting my spot!
