Roasted Red Pepper Avocado Toast

Last Saturday was the first day that an alarm didn't wake me up in about 4 months. IT WAS AMAZING. I work a 9-5 (or more like 7/7:30-4) and until a few weeks ago, my weekends consisted of studying for a major board exam. Once the exam was over, Michael and I went to southern France for a little adventure and some R & R. We LOVE to travel! So far we've been to: Grand Cayman, Italy, Spain, Colombia, Chile, Belize, Mexico, Greece, and Southern France. Germany is what I'm hoping for next. What I've noticed in all these places......

Ingredients

1-serving
  • 1bread Slice of ezekiel
  • olive oil
  • 1/4red pepper , sliced very thin
  • 1/2avocado
  • a fewparsley leaves
  • herbes de provence
  • salt

Steps

  1. 1

    Drizzle the bread with olive oil

  2. 2

    Toast the bread until golden brown

  3. 3

    Meanwhile, slice the red pepper thin and halve the avocado

  4. 4

    Slice the avocado within the skin

  5. 5

    Place the toasted bread on a plate. Arrange the red pepper on the bread. Then, with your finger separate the avocado from it's skin and arrange slices on the red pepper.

  6. 6

    Sprinkle with salt, herbes de provence, and parsley leaves

Hey there!I'm so glad you stopped to visit! Welcome to my blog/recipe bank. I love cooking for Michael (my husband) and I when we aren't working at the hospitals here in Atlanta. Being health conscious, it's all about the preventative medicine people! That includes what we eat :) I'm an oncology pharmacist and creating potions and recipes was something I was born to do.
