Zucchini & Ham Scramble

When dieting a good breakfast is an essential. Fill yourself up well and avoid snacking.
This recipe work without the ham if you prefer. Equally use quartered cherry tomatoes as a replacement. Simply add these uncooked at the stage where the recipe calls for adding the microwaved ham.

Zucchini & Ham Scramble

Heat a large fry pan on medium heat. Grate the zucchini in the large holes of a box grater and put in the pan. Cook the zucchini for about 10 minutes moving it regularly and making sure it does not brown. Halfway through push the zucchini to one side of the pan and tilt it so the water that has been produced tips to the edge. Remove the water with kitchen paper.

Whilst the zucchini is cooking microwave the gammon steak for 2 minutes and then chop into small cubes, add to the zucchini.

Sprinkle over the pepper, salt and oregano and stir to mix.

Make gaps in the zucchini ham mix to create pockets and crack the eggs in these pockets. Scramble the egg whites into the mix without breaking the yolks. When the whites are firm break the yolks add scramble these into the mix. As soon as the yolk is set serve on warm plates.
