In a large bowl, mix together flour, baking powder and salt

In a separate container or measuring cup, combine almond milk, olive oil, maple syrup, and vanilla

Whisk all ingredients together in large bowl

Gently fold in sliced banana

Meanwhile, heat a large skillet on medium heat and lightly oil the cooking surface

Scoop out batter onto skillet using a 1/4 or 1/3 cup measuring cup onto the skillet and cook for 2-3 minutes. Small bubbles will form in the batter when they are about ready to be flipped. Cook on opposite side for another 1-2 minutes until golden brown.
