Homemade Shirazi Faloodeh (Traditional Persian Frozen Dessert)

Shirazi Faloodeh is one of Iran’s most beloved traditional frozen desserts, originating from the beautiful city of Shiraz in Fars Province.
Known as the city of poetry, gardens, and history, Shiraz is the home of the famous Persian poets Hafez and Saadi. The region is also home to some of Iran’s greatest historical treasures, including Persepolis and Pasargadae.
This refreshing dessert is made with delicate starch noodles, a fragrant rose water syrup, and sour cherry syrup. It is traditionally enjoyed with lemon juice and, if desired, Persian saffron ice cream.
The Faloodeh itself is vegan-friendly; traditional Persian ice cream can be added when serving.

To make the syrup, mix sugar and water and place over heat. Stir constantly until the sugar dissolves. When it starts bubbling around the edges, turn off the heat.

Mix rose water and lemon juice, then add them to the syrup.

Let the syrup cool completely, then place it in the freezer. Stir occasionally until it reaches a snowy, slushy texture.

When the frozen syrup is ready, prepare the Faloodeh noodles.

Mix the starch and water together. Strain the mixture and pour it into a pan.

Cook over low heat, stirring constantly, until the mixture becomes translucent and glass-like.

If it becomes thick but is not yet translucent, add more water and continue cooking.

Once it becomes translucent and reaches the right consistency, add the rose water and stir until it thickens again.

Transfer the mixture into a piping bag fitted with a small round-holed nozzle.

Prepare a bowl of ice mixed with cold water beforehand.

Pipe the noodles directly into the bowl of ice water.

Do not stir, as the noodles may become mushy. Place the bowl in the refrigerator for a few hours until the noodles firm up.

Remove the noodles and add them to the frozen syrup. The syrup should not be completely solid. Also avoid stirring too much at this stage, as the noodles can break apart. I made this mistake myself.

Pour sour cherry syrup and a little lemon juice over the Faloodeh. Serve with traditional Persian ice cream if desired.
Tips
If the Faloodeh noodle mixture is too soft or not cooked enough, the noodles will fall apart and dissolve as soon as they are placed in water.
