Heat 2 tablespoons of oil in a small pan. Add the dried mint and fry gently for a few seconds until fragrant. Set aside.

Peel and cut the zucchini into chunks. Fry until lightly golden, then drain the excess oil.

Add the water to the zucchini, cover, and let it simmer. If your kashk is not very salty, you can add a little salt to the zucchini. After cooking, all the water should be completely evaporated.

There are two ways to add the onions:
Traditional method:
Fry the onions. Add the garlic near the end and cook briefly. Add the onion and garlic mixture to the cooked zucchini and mix until the zucchini is completely mashed.For a richer flavor:
Caramelize the onions, then add the garlic near the end. Add half of the caramelized onions and garlic mixture to the zucchini while it cooks with the water. Add the other half after the water has completely evaporated, then mash well. - 5
Stir in the turmeric and black pepper, and cook for about a minute.

Add the kashk and stir until well combined.

Stir in the fried dried mint.

Add the walnuts, if using. The finished dish should be thick, with no excess liquid, and should move easily around the pan. Taste and adjust the salt if needed. Serve warm with fresh Persian bread.
