classic, spicy flavors of traditional Mumbai vada pav into a portable flatbread, roti, tortilla, or besan chilla.
Steps

Mix besan, salt, turmeric, red chilli powder, oil, ajwain and water to make a thick, flowing batter.

For filling, heat oil in a pan. Add mustard seeds, urad dal, curry leaves, and green chilli-ginger paste.

Add turmeric powder, then mashed boiled potatoes, salt, and sugar. Mix and cook for 2 minutes, then add lemon juice and coriander leaves.

Heat a tava, pour a ladleful of batter, and spread into a circle. Drizzle oil around edges. Cook both sides until golden.

Transfer wrap to a plate. Make a cut from the center to the edge.Spread green and red chutney, then potato filling. Add cheese if using.

Fold as shown in the picture to form a wrap. Serve hot.

It's ready.
Tips
Ensure the batter is of thick flowing consistency for the best texture. Adjust the spice level according to your preference.
