Cut the parsley and mint finely. The smaller you cut them, the better. Then place in a salad bowl.

Mix the onion dices with the pepper and add to the bowl.

Add the rest of the vegetables to the bowl.

Finally, add the seasonings: lemon juice, olive oil, and salt. Mix all together then adjust seasoning to taste and serve.
