Spread a layer of kataifi pastry in a pan and cover it with oil or clarified butter, as you prefer.

Fry over the stove until the bottom is golden brown, then transfer to the oven to brown the top.

Drain the oil and place the layer on a serving plate. Then, add another layer of kataifi pastry to the pan and repeat the process.

Once the kataifi layers have cooled, place the first layer on a serving plate, spread the cream on top, then add the second layer over the cream.

Pour the simple syrup over the top and garnish with pistachios or as desired.
