Homemade noodle

Making own noodle is mission impossible for me. After searching different kind of recipes, i found and tried out this recipe from iron chef Morimoto on his homemade udon noodle.
With his recipe, i made my mission possible. I love the consistency of noodle.

Making own noodle is mission impossible for me. After searching different kind of recipes, i found and tried out this recipe from iron chef Morimoto on his homemade udon noodle.

Steps

Mix the flour, salt and water. Shape it to ball. Dough should not be too hard and too soft. Let it rest for 1 hour to be easier to roll.

Roll the dough into desire thickness (0.5 cm)

Fold 1/3 of the dough from left and right side.
- 4
Slice the dough with knife into your desire thickness.

With enough flour, separate the noodle and portion it.
- 6
Separate the noodle/open up the noodle.

Boil 1-2 ltr water. Place the noodle into boiling water. Cook for 5-8minutes depend on the thickness of noodle. Make a try.

Strain out the noodle. All purpose flour noodle.

Strain out the noodle. Whole wheat flour noodle
