Ingredients

  1. 1 lbchuck roast, cut into 1 inch cubes
  2. 1 Tolive oil
  3. 1small onion, diced
  4. 2 cupsdiced carrots
  5. 2 clovesgarlic minced
  6. 1 tsea salt
  7. 1/2 tpepper
  8. 1 tthyme
  9. 1 tcrushed rosemary
  10. 2bay leaves
  11. 2 cupsbeef broth
  12. 1/3 cupfrozen peas
  13. 1 Tcornstarch
  14. 2-3 Twater

Steps

  1. 1

    Heat olive oil in large skillet over medium heat

  2. 2

    Add beef and brown on all sides to sear meat, about 4 minutes

  3. 3

    Combine beef, onion,carrots, salt, pepper, thyme, rosemary and bay leaf

  4. 4

    Pour in beef broth and stir

  5. 5

    Lid and cook on low 8-10 hours

  6. 6

    Mix cornstarch and water, pour into crock with peas and stir

  7. 7

    Lid and cook 15-20 minutes on high until thickened

  8. 8

    Serve over rice, mashed potatoes, or pasta
