Every week we have a fresh delivery of clams to our house. They are so fresh that they are still alive. They are so delicious and meaty once cooked.

Put 3 table spoons of vegetable oil into the wok, heat up for 15 seconds

Put garlic, spring onions, ginger, Sichuan peppercorns, and chilli into the wok, fry them until the aromas starts to come out.

Add clams into the wok, 2 tablespoons of wine, 4-5 tablespoons of oyster sauce. Stir fry. Put the lid on. Medium heat, 2 minutes. Stir half way

Switch off the heat. Serve hot.
