Ingredients

Serves 4 servings
  1. 1 1/3 lbspork leg (or chicken) (about 600 grams)
  2. 1/2onion
  3. 1 clovegarlic
  4. 1bay leaf
  5. 1/2 cupvinegar (120 ml)
  6. 4dried ancho chiles
  7. 1 pinchthyme
  8. 1 pinchcoriander seeds
  9. 1 pinchoregano
  10. 1 pinchgrated ginger
  11. 2whole cloves
  12. Salt, pepper, and sugar to taste

  1. 1

    Cook the pork leg with the onion, garlic, and bay leaf.

  2. 2

    Soak the chiles in vinegar.

  3. 3

    Shred the meat.

  4. 4

    Blend the chiles with the spices.

  5. 5

    Cook the meat with the chile mixture until heated through.
