Prawny pesto pasta

I am a lazy cook but at the same time I want my food to be delicious. This recipe brings together something that is quick and easy and it tastes delicious and complex.
You can bring this together in just a few minutes.
The secret is to use more than one kind of pesto. I have used two kinds in this recipe but you can use any number. It’s a great idea to keep opened jars of pesto in the fridge or if you want to keep them for even longer fill ice cube trays with pesto and keep them in the freezer.
This is a flexible recipe and you can use more pasta if you want or substitute different veg. You could add cauliflower courgette eggplant or maybe Chinese leaves instead of the broccoli.

Cut the shallots and broccoli into strips about 5mm thick and place in a nice big pan

Add about 15mm of water and bring to the boil. Simmer until tender.

While the veg is cooking cook your pasta. I used a cupful of penne pasta this time but you can use a bit more if you are hungry.

When the veg is nearly cooked add a splosh of extra virgin olive oil and turn up the heat. Keep stirring while you boil the water off. Don't discard the water. If you throw away the cooking water you are throwing away flavour. Boil the water off and you keep all that flavour in the dish. Be sure to keep stirring and watch carefully to make sure it doesn't catch.

When the water has all gone and it starts to sizzle throw in the pesto and prawns and keep stirring.

Drain and add your pasta and stir it all together.

Spoon onto the plate and serve with sprig of fresh basil and a sprinkle of parmesan. I had a few cherry tomatoes in the fridge and added them as a garnish.
