If using fresh or frozen shrimp, thaw if needed, trim the antennae, and rinse well. Set aside.

Seasoning note: The fish sauce is used as a seasoning and was not shown in the photo.

In a separate pot, add the water and half of the lemon slices. Bring to a boil.

Once boiling, add the shrimp to the pot. When it returns to a boil, turn off the heat, cover, and let sit for 1 minute. Remove the shrimp immediately.

Place the cooked shrimp directly into a bowl with the Shaoxing wine and water mixture. Add the ice cubes and refrigerate for at least 20 minutes before serving. (The longer you soak, the stronger the wine flavor. Adjust soaking time to your preference.)

For serving option 1, hang the shrimp on the rim of a glass with the tails soaking in the wine mixture. Dip the shrimp in the wine sauce when eating.

For a stronger flavor, you can add Chinese herbs to the wine mixture. Use a small amount of angelica root, red dates, and goji berries. Soak them briefly in hot water to soften, let cool, then add to the wine mixture.
