Ingredients

  1. 900 gskinless chicken thighs and/or drumsticks
  2. 1onion, minced
  3. 1large carrot, cut in bite-sized pieces
  4. 1large potato, cubed
  5. 2large tomatoes, chopped
  6. 4 clovesgarlic, minced
  7. 2zucchini, sliced
  8. 2 Tbsptomato paste
  9. 2 handfulscoriander leaves, chopped
  10. 2 Tbspcooking oil
  11. Spices:
  12. 1 Tbspground coriander
  13. 2 tspground cumin
  14. 1/2 tspturmeric powder
  15. 1/4 tspground cardamom
  16. 1/4 tspcinnamon
  17. to tastesalt

    Heat oil in a large pot. Saute the onion until it starts to brown a little. Add the chicken and cook each piece so it's browned on both sides.

    Add potatoes and carrots. Cook for a few minutes while stirring. Add the tomatoes and cook for another few minutes while stirring. Cover the pot and continue to cook on medium for 5-6 minutes, stirring occasionally.

    Add in the garlic and all the spices. Mix well with other ingredients. Add the zucchini, tomato paste, and a little salt and mix in.

  4. 4

    Pour in enough water to just cover everything. Bring to a boil, turn to low and let simmer for 45-50 minutes until every thing is well cooked and the stew has thickened.

  5. 5

    Just before serving, stir in the chopped coriander. Enjoy with basmati rice or bread :)
