Ingredients

  1. Cake
  2. 3eggs
  3. 2 cupsugar
  4. 1 1/2 cupvegetable oil
  5. 2 cupcarrots, grated
  6. 1 tspsalt
  7. 1 tspbaking powder
  8. 1/4 tspground nutmeg
  9. 1 smallcanned crushed pineapple
  10. 2 tspvanilla extract
  11. 1 cupchopped nuts
  12. 3 cupall-purpose flour
  13. 1 tspbaking soda
  14. 1/2 tspground cinnamon
  15. Icing
  16. 1/2 boxpowdered sugar
  17. 1/2 stickbutter
  18. 3 ozcream cheese
  19. 1 tspvanilla extract

Cooking Instructions

    Pre heat oven to 350

    Beat eggs untill floppy, add sugar and beat till blended, add oil and beat till blended

  3. 3

    Add carrots, pineapple, vanilla, and nuts and stir to blend

  4. 4

    In a seperate bowl sift together salt, baking powder, nutmeg, flour, baking soda, and cinnamon

  5. 5

    Add the wet ingredients to the dry ingredients and mix till well blended

  6. 6

    Pour into a 9X13 cake pan and bake 45-60 minutes

  7. 7

    To make icing put all ingredients together in bowl and beat until well blended

  8. 8

    Once cake has finished baking let cool completely before covering in icing
