My mom cooked that for me when I was a child and in my town plantains are the base of many dishes. It is simple but with a lot of flavour. Please enjoy it!

Having the plantains peeled, Boil them during 30 min until they are soft reserve

Mash the cheese with your hands until you get small little pieces. Reserve for now.

Chop the pork in small cubes. In a hot pan add the pork and season it with salt. You do not need oil because the pork has its own fat. Fry the pork during 10 to 15 min. Reserve.

Mash the plantains and add a 1/4 of a cup of hot water where you have boiled the plantains until have a mass. Add to the mass the cottage cheese and mix.

In another hot pan add the butter and stir-fry the scallions during 1 or 2 min until is transparent, taking care of do not burning it. Add little by little the fresh cheese, the plantain mass, the pork and the milk, mix to combine all the ingredients

Add some fresh coriander at the end
