Soak the lentils for 2 hours. After soaking, rinse them and place in a pot with water. Cook over heat until tender.

Soak the rice. Once the lentils are cooked, add the rice to the pot along with more water if needed, the salt, and 1 tablespoon olive oil.

Cook the rice over medium heat until the water is absorbed, then reduce the heat to low.

Chop the onions and sauté them in olive oil. Add most of the sautéed onions to the rice after it is cooked, reserving some for garnish. Drizzle 2 more tablespoons of olive oil over the rice.
