Quick Cheesecake in a Glass

Super simple, refreshing, and absolutely delicious!

A few more tips:

You can make your cheesecake lighter by choosing low-fat cream cheese, yogurt, and digestive cookies! Also, try serving it with quince or sour cherry preserves instead of jam—it's just as tasty! 
NEW UPDATE: After dozens of trials, I recommend adding lemon zest—ideally lime zest—to the cream cheese mixture for a fresh, zesty flavor (I've also tried orange and bergamot zest for a unique twist). I also found that sugar-free digestive cookies work best because they're firmer than the original and don't get soggy in the fridge. Finally, I highly recommend garnishing with fresh fruit, either in addition to or instead of the jam. Thanks to ANGOLINA for the step-by-step photos.

Ingredients

60 Minutes
Serves 6 servings
  1. 12digestive cookies
  2. 21 ozcream cheese (about 600 grams)
  3. 1 containerstrained Greek yogurt (about 7 oz or 200 grams)
  4. 4-5 tablespoonspowdered sugar
  5. 1 tablespoonbrandy
  6. 6 tablespoonscherry jam

Steps

60 Minutes
  1. 1

    Mix the cream cheese, yogurt, and powdered sugar together using a mixer or a whisk.

    Roughly crush 2 digestive cookies into large pieces and place them in a lowball glass. Repeat for all glasses.

    Fill each glass up to two-thirds full with the cream cheese mixture.

    Thin the cherry jam with the brandy and add one tablespoon on top of the cream cheese layer in each glass.

    Chill for about an hour and enjoy!
